The classic zucchini fritter recipe is made with eggs, milk, and cheese, therefore, it’s not vegan-friendly. I really wanted to make vegan zucchini fritters because my kids love them so much so I needed to make a different recipe! These plant-based zucchini fritters are absolutely delish as a side dish to Tempeh Meatballs or TVP Meatballs. They’re ready in minutes and are loaded with healthy ingredients and plenty of nutrients.
Ingredients and Substitutions
First, select the ingredients below to start this easy vegan recipe:
Shredded Zucchini – Choose fresh, firm zucchini with skin on it to add fiber to your meal. Flour – You can use all-purpose flour, spelt flour, or white whole wheat flour. Salt and Pepper – to taste. Unsweetened Almond Milk or any dairy-free milk you love, like oat milk or soy milk. Italian Seasonings – or dried basil or dried oregano. Garlic Powder – for more flavor. Fresh Chives – this gives the fritters a nice color as well as a subtle taste. Baking Powder – to make them ever so slightly more fluffy. Nutritional Yeast -This adds a lovely cheesy flavor to these vegan zucchini fritters to mimic the taste of an authentic fritter recipe. Note that if you skip this ingredient, the batter won’t be as thick, and you will have to add 2 tablespoons of flour to achieve the same texture.
