Soy Milk – You can use any plant-based milk you like, like almond milk or coconut milk, but soy milk is richer in protein and can even come in protein-enriched versions, boosting the natural protein of your overnight oats. Vegan Greek Yogurt – Pick your favorite plant-based yogurt. Soy yogurt tends to have more protein than alternatives.
