Using a cookie scoop or tablespoon, scoop the ginger crinkle cookie dough into 2-inch balls and place 2 inches apart onto a plate or baking sheet. Cover them in plastic wrap and chill for 2 hours, then preheat the oven to 375 °F/190°C and line two baking sheets with nonstick foil or baking paper. Take the chilled balls and roll them into the confectioner’s sugar until they are evenly coated. Then place the coated balls 1 inch apart on the prepared baking sheet.
