When I’m looking for a quick snack that I can put together in a few minutes, and that is rich in protein, I normally go for Banana Protein Balls, a Mango Protein Smoothie, or Protein Cookie Dough. But when I’m doing my meal prep, I go for this protein parfait. It’s such a quick recipe that is full of flavor and loaded with goodness. With a bit of practice, I can now make it in under 5 minutes.
Ingredients and Substitutions
Raspberries and Blueberries – I love this combination of fresh fruit, but you can also use strawberries, blackberries, or boysenberries. Prefer fresh above frozen fruits. Vegan Yogurt of Choice – I like to use soy yogurt to have as much protein as possible, but other yogurt also work. Vanilla Protein Powder – I tried this with Nuzest and MicroMike (which are pea and almond-based protein powder) and it worked fine with both. Powdered Peanut Butter – It works with PB2 or MacroMike’s powdered peanut butter, but you can also use regular peanut butter or just more protein powder. Maple Syrup – Any unrefined liquid sweetener, like agave syrup or coconut nectar work. Granola – You can make your own high-protein granola or buy a commercial version. Vegan Dark Chocolate Chips – I like my chocolate chips over 70% cocoa, but you can use any plant-based chocolate chips. Coconut Oil – To melt the chocolate chips. You can also use avocado oil.
