Unsweetened Desiccated Coconut – opt for ultra-fine dry coconut threads instead of shredded coconut that would make the energy balls dry. Quick Oats or Almond Flour – Pick the latter for a gluten-free option. Coconut Nectar or maple syrup. Coconut Milk – You can also use almond milk or soy milk. Coconut Water – Or just water if you don’t have coconut water. Natural Coconut Extract – I’m a huge fan of coconut so there’s never enough coconut for me!
