I love churros but when I have too many ripe bananas and also don’t feel like frying my food, I make banana churro waffles. It’s an alternative to making my other ripe banana recipes, such as my Eggless Banana Cake, Banana Bagels, or Banana Monkey Bread. They have a great churro taste in a banana waffle shape. The recipe uses only 3 ingredients, and it’s impossible to fail with a good waffle maker! So go make your easy churro waffles!
Ingredients and Substitutions
Self-Rising Flour – Since this is just a combination of all-purpose flour with baking powder, you can make it at home. You can also use cake flour or bread flour with baking powder. Ripe Bananas – The riper the bananas, the sweeter your churros will be. If you use bananas not ripe enough, you might need to add sugar to reach the right sweetness. Almond Milk – Almond milk makes the churros crispier but other plant-based milk also work fine.

Sugar – I use sugar to balance the sweetness of my churro waffles if the bananas are not ripe enough. I also use it to make my cinnamon sugar coating. Cinnamon – for the classic churro coating. Vanilla – for even more taste!

Tips and Tricks
The recipe is oil-free and therefore the waffles need to bake for 6-7 minutes to get really crispy. For them to remain crispy for longer after baking, swap 1/4 cup of the almond milk for oil like canola oil. Also add 1/4 cup sugar in the batter for crispier waffle churros. Don’t pour more than 1/3 cup of batter per waffle. They will cook faster, be thinner, and crisp more! You can add ultra-thin slices of banana on top of the batter, then cover them up with more batter to stuff the churros with pieces of banana. This taste good but it’s tricky, as the banana can stick to the waffle iron.
